Friday Kitchen - Jerk Pork

What is it

Delicious dish, easy & tasty can be done on the barbeque or in the oven, will serve 3-4 depends on how hungry you are... Enjoy!

Ingredients

Jerk Seasoning
2 tsp Salt
2 tsp Fresh Chilli
2 tsp Cinnamon
2 tsp Sugar
2 tsp Mixed spice
2 tsp Ground coriander
2 tsp Garlic
2 tsp Black pepper

500g of Belly Pork sliced
Splash of Oil
Large oven proof tray

Coconut rice
300g Rice
Coconut Cream to taste
20g Butter
30g Chopped onions
Salt

Jerk Pork
Mix all the spices into a bowl
Coat the jerk seasoning over the pork belly, using a little oil rub the spices into the skin and flesh
Place the pork onto an oven-proof tray
Cook at gas mark 4, 180c 35-40 minutes until meat is soft and tender


Coconut Rice
Sweat onions in the butter add salt then add coconut cream and cook out.
Add rice and coat, cover with water, cook the rice until soft and serve.
