Fridays Kitchen - Mozzarella & Parma Ham with Marinara Sauce

IssTV's very own chef Des Burke shows Natalie how to cook a really simple but very impressive Italian dish.


Marinara Sauce
1 can chopped tomatoes
2-3 cloves garlic
Olive oil
Fresh basil
Salt and pepper
100ml water

Parma Ham and Mozzarella balls

4 Fresh Mozzarella Balls
8 slices Parma Ham
Cracked black pepper
Wild rocket for garnish

Sweat the garlic in a tablespoon of olive oil over a medium heat until the garlic is soft and lightly browned.
Pour over the tomatoes with 100ml water and bring to the boil, simmer to reduce the sauce a little.
Put the sauce through a blender and process until smooth.
Return the sauce to the pan, season to taste stir through the basil and cook for a minute more then remove from the heat.


Drain liquid of Mozzarella balls then season with cracked pepper.
On a very clean table lay down the slices of Parma Ham
Place the Mozzarella in the centre of the Parma Ham and then fold the Ham over the ball, repeat and make sure that the mozzarella is completely sealed; this is to stop the cheese from leaking whilst it is being cooked.
Brown in a frying pan and then place in the oven (180c) for 10 minutes (until cheese has melted).
