Beef with black bean sauce


Ingredients:

300g beef fillet, 200g onion, 200g green peppers, 200g red peppers,15g fermented (salted) black bean , 15g garlic, 1tsp light soya sauce, ½ tsp toasted sesame oil, 1tbsp corn flour, 1tsp sugar, 1tbsp oyster sauce, White pepper, powder, 4tbsp boiling water.

Preparation:

Slice the beef, then season with a few drops of sesame oil, a tsp light soya sauce, a pinch of white pepper powder, a tbsp corn flour and a tsp of sugar. Mix well. Wash the black bean then drain, mince the garlic and chop the vegetables into small pieces.

Cooking:

Heat a wok or frying pan until it starts smoking and add half tbsp of vegetable oil. Stir in the beef and cook for 1 minute, remove the beef. Re-heat the wok again along with half tbsp vegetable oil, stir in garlic, salted black bean, onion, green peppers and red peppers. Cook for 1 minute, and then add 4 tbsp of boiling water. Cook again for 30 seconds. Add the oyster sauce and stir in the beef, keep stirring for 10 seconds. Finish off with a few drops of sesame oil and a pinch of sugar.

Ready to serve.

This dish is ideal to serve with rice or noodles, it's a typical Sichuan dish. Salted black bean is made from soya bean.
